I will show you how to make homemade frozen oven chips with a crunchy glass like crust and a soft, smooth and pillowy inside. The method follows the triple cooked process. After the first fry in vegetable oil the chips can be kept in the freezer to be used whenever needed! A quick defrost and then an oven cook produces once of the best chips you will ever eat. They can be cooked from frozen, see note below.

These potato fries go perfectly with fish and chips, burgers, chip butties, and… on their own with sea salt and a splash of vinegar. A robust chip that suits many different plates.

The potatoes can be double fried instead of cooking in the oven. If this is your preferred method then after the first fry they can be cooled and then fried for the second time, or refrigerated and fried again, or frozen, then defrosted and then fried. The final frying temperature is 180c - 356f

You can oven cook these from frozen. Set your oven to 200c, preheat your tray or pan, add the oil and cook the potatoes for 30 - 35 minutes. Cooking the chip form frozen produces good results but defrosting the chip first has outstanding results.

Art-based activism, or Artivism can be used to amplify and center the voices of those impacted by state sponsored violence and racial inequity in the United States. Artivism can build solidarity across lines of difference and connect to our shared humanity. In this talk, Felicia will demonstrate how Behind the Walls, Between the Lines, a movement to deepen the awareness of the legacy of racial inequity in the United States, and inspire activism at its dismantlement, sparks social change. Felicia A. Henry is a Ph.D. Student in the Department of Sociology and Criminal Justice at the University of Delaware. Her research interests include race, ethnicity, gender, criminal justice/mass incarceration, and social vulnerability in disasters. A Licensed Social Worker (LMSW), Felicia received her Master of Social Work degree from the School of Social Policy and Practice at the University of Pennsylvania. Felicia is a Bill Anderson Fund Fellow and Recipient of the Unidel Award in Sociology & Criminal Justice and the University Unidel Distinguished Graduate Scholar Award. Felicia is the founder of Behind the Walls, Between the Lines (BTWBTL), a movement to deepen the awareness of the legacy of racial inequity in America, particularly within the criminal legal system, and inspire activism aimed at its dismantlement. 2020 brought a newly revitalized focus to the connections of sports and activism, but for WNBA champion and Olympic medalist Tina Charles, this year simply amplified her ongoing commitment to social justice and activism. Queens born and raised, Charles' support for the Black Lives Matter movement received national attention in 2016 and she is the founder of non-profit organization Hopey’s Heart. Just this fall she partnered with Queens-based community organization Together We Can to provide diapers and food to families in need. Charles, whose WNBA career has included a stint on New York Liberty, will discuss her perspective as a New Yorker, her basketball career, and her activism with historian Theresa Runstedtler.

Susan Meiselas is a documentary photographer and member of the cooperative Magnum Photos since 1976. She is the author/editor of 7 books, including a six year project curating a 100 year photographic history of Kurdistan. Meiselas integrated her own work into Kurdistan: In the Shadow of History, and created a pioneering website of cultural exchange, www.akaKurdistan.com, an online archive for collective memory. Meiselas has also co-directed two films: Living at Risk and Pictures from a Revolution.

Meiselas is well known for her multiple decades documenting human rights issues in Latin America. Her photographs are included in American and international collections. In 1992 Meiselas was made a MacArthur Fellow. Since 2008, she has been the President and Acting Executive Director of the Magnum Foundation.

The Magnum Foundation champions in-depth, independent documentary photography that fosters empathy, engagement, and positive social change. The MF supports, trains, and mentors the next generation of photographers, encouraging active collaboration with media, communities and non-profit organizations to create innovative distribution strategies for greater social impact.

The Department of Art and the History of Art and the Program in Film and Media Studies presents a conversation between artist Jess Dugan and curator Mary Statzer.

Jess T. Dugan is an artist whose work explores issues of identity through photographic portraiture. Dugan’s work has been widely exhibited and is in the permanent collections of over 35 museums throughout the United States. Dugan’s monographs include To Survive on This Shore: Photographs and Interviews with Transgender and Gender Nonconforming Older Adults (Kehrer Verlag, 2018) and Every Breath We Drew (Daylight Books, 2015). They are the recipient of a Pollock-Krasner Foundation Grant and an ICP Infinity Award, and were selected by the Obama White House as an LGBT Artist Champion of Change. They are represented by the Catherine Edelman Gallery in Chicago.

Mary Statzer is the curator of prints and photographs at University of New Mexico Art Museum (UNMAM), where she oversees a collection of more than 10,000 photographs. Statzer brought the exhibition To Survive on This Shore: Photographs and Interviews with Transgender and Gender Nonconforming Older Adults to UNMAM, and organized Patrick Nagatani: A Survey of Early Photographs and Indelible Ink: Native Women, Printmaking, Collaboration. In 2019, she and her colleagues launched UNMAM’s Acquisitions Fund for Diversity and Equity. Statzer holds an M.F.A. in printmaking from Arizona State University and a Ph.D. in the history and theory of art from University of Arizona. She has published articles in Aperture magazine and edited a multi-author book titled The Photographic Object 1970, released in 2016. She has participated in photography portfolio reviews across the United States.
